Carrots are root vegetables that can be regrown from the carrot tops or tops with about one inch of the carrot itself. Instead of discarding the carrot tops, they can be used to sprout new leaves and grow new carrot greens. To regrow carrots from the tops, follow these steps: Cut off the carrot tops, leaving about an inch of the carrot attached. Place the carrot tops in a shallow dish or container with water, ensuring that the cut end is submerged. Change the water every few days to keep it fresh.
